I would like to brew meads, but don't know where to find books, methods or
recipes. Any suggestions would be helpful. Thanx

If you are like me and prefer a book you can write on and such... the
book by Charlie Papazian "Home Brewers Companion", written for your
more advanced brewer, kind of techy but still fun to read, has some
mead recipes. I've not made any yet but all else I've made has come out
well. He does a good job describing the chemistry behind the brewing.

There are all kinds of recipes out there. About all beer recipe books
have a few in them. Check out your local libraries the ones in town
here have a few brewing books. So check the book out and check out the
recipes might be the one you want.

I like my mead strong, so I usually follow this one. Its a very simple
recipe, but I've gotten nothing but great reviews.


Ingredients:
1 gallon Water
4 pounds Honey
6 sticks Cloves
2 sticks Cinnamon
1 Lemon, juice & peel
1 teaspoon Active dry yeast


Directions:
In a large nonreactive pot, add the next four ingredients to the gallon
of water. Boil all together for 30 minutes, then strain into a crock
that will hold it with a little room to spare. When cooled, add the
yeast, dissolved in some of the liquid. Allow to ferment in a cool
place - 55 degrees is ideal - until it ceases bubbling and the liquor
clears, then bottle, cap tightly and store in a cool, dark cellar. It
should not be used for at least a month, and longer is better. Mead
unlike many other drinks, does not improve with really long aging, so
it should be consumed within a year of the time it was made. ;+} ***
